Quite a few people have been asking for members’ recipes from the New Year Potluck and other events. And here is our first one!!

Spanakopita
From Kamal Rabbat

FILLING

500 gm chopped spinach, thawed and well drained
2 bunches flat-leaf parsley, stems trimmed, finely chopped
2 large onions, finely chopped
16 oz feta cheese
6 oz parmesan grated
1/2 tsp nutmeg

CRUST

8 oz  phyllo pastry
Approx.  1 cup clarified butter

  1. Preheat  oven to 350
  2. Fry the onions in butter
  3. To make the filling.  In a bowl add all the ingredients including the onions.  Stir until well combined.
  4. Prepare a 7 x 13 baking dish.  Brush bottom and side with clarified butter.
  5. Line the baking dish with two sheets of phyllo.   Brush with clarified butter.  Add two more sheets and brush them with clarified butter.  Repeat until two thirds of phyllo is used up.
  6. Evenly spread the spinach and cheese filling over the phyllo crust.  Top two more sheets and brush with clarified butter.
  7. Continue to layer the phyllo sheets, two-at-a-time, brushing with clarified butter, until you have used all the sheets. 
  8. Cut spanakopita only part way through into squares.
  9. Bake for 1 hour, or until the phyllo crust is crisp and golden brown.  Remove from oven.  Finish cutting into squares and serve.  Enjoy!
